BIRD Bakery’s Banana Pudding

Serves 12

Ingredients

6 fresh eggs

1 cup granulated sugar

 ¼ cup all-purpose flour

4 cups whole milk

1 tsp vanilla extract

4 bananas, sliced

1 ½ boxes Nilla wafers (96 total)

Whipped cream

Instructions

  1. Whisk the eggs in a large bowl until frothy.

  2. Combine the sugar and flour in a separate bowl, stirring well.

  3. Gradually add the mixture to the eggs, beating until thick.

  4. Heat milk in a saucepan until just warmed through. Do not boil.

  5. Slowly pour about 1.5 cups of hot milk into the eggs while whisking to combine them without curdling.

  6. Stir the mixture in the saucepan over a double boiler until it thickens and coats the back of a spoon.

After removing from the heat, stir in the vanilla.

Cool the custard in an ice bath to prevent a skin from forming. Place plastic wrap directly on top of the custard. Once cooled, you can store the custard in an airtight container for up to 5 days.
