Khloé Kardashian and Kris Jenner prefer quick, simple, and healthy cooking methods. In the latest issue of We, the mother-daughter duo reveals their delicious recipe for lemon-basil roasted vegetables medley. Kardashian, 39, explains that the recipe is highly versatile and consistently delicious. By using fresh vegetables and Country Crock Plant Butter, it is a guaranteed crowd-pleaser.
The recipe consists of two simple steps and does not contain any dairy products. It includes readily available ingredients like zucchini, red bell peppers, red onions, and tomatoes. To enhance the dish, Kardashian and Jenner suggest serving the vegetables over hot cooked couscous or orzo.
The Kardashian-Jenner family often shares their preferred foods, whether they are healthy or indulgent, along with their recipes, with their fans. Kardashian expressed her love for cooking and finds it quite relaxing. In an interview with Food & Wine magazine in June 2017, she mentioned her fondness for preparing dishes from scratch.
Sometimes, the Good American cofounder finds it impossible to resist indulging in some delicious takeout, especially if it happens to be her favorite guilty pleasure. In a November 2019 Instagram Story video, she expressed her inability to decline such temptations, exclaiming, "I don't understand why people put me in this situation because I simply cannot refuse." Despite briefly considering whether or not to indulge in a slice, Kardashian ultimately decided to embrace the moment and savor every bite, declaring, "I suppose I'll just devour it and enjoy life."
In that same month, Kardashian's 5-year-old daughter, True, assisted the Keeping Up With the Kardashians star in baking homemade bread. Kardashian captioned photos of True with the cinnamon raisin loaf they made, exclaiming, "My baby bread baker!! We bake bread together several times a week. I hope we continue this weekly tradition forever." (Kardashian is also the mother of her 14-month-old son, Tatum, whom she shares with ex Tristan Thompson.)
Meanwhile, Jenner showcased her impeccably organized and enormous refrigerators on Kourtney Kardashian's Poosh website in May 2022. The author of In the Kitchen With Kris had her trio of black, matte fridges fully stocked with an abundance of green fruits and vegetables, beverages, and dairy products. Jenner even dedicated an entire fridge solely to ice cream and frozen desserts.
Earlier this year, Kourtney, who is currently pregnant with her first baby with husband Travis Barker, shared her sons' favorite smoothie recipe on her Instagram Story in April. She described it as a masterpiece smoothie for parents seeking a healthy breakfast option and mentioned that her sons rated it 9/10. Kourtney shares three children, Mason (13), Penelope (11), and Reign (8), with her ex Scott Disick. The smoothie, which includes almond milk, strawberries, a banana, a date, ice, and Barlean's mango peach smoothie flavor omega-3, is a delicious and nutritious fruity drink. Lemon-Basil Roasted Vegetables Medley
Serves 6
Ingredients
3 tbsp Country Crock Plant Butter Sticks with Avocado Oil, melted
2 large zucchini, sliced
2 large red bell peppers, chopped
1 small red onion, chopped
1 clove garlic, finely chopped
2 large tomatoes, seeded and chopped
¼ cup loosely packaged fresh basil leaves, thinly sliced
1 tbsp lemon juice
1 tsp grated lemon peel
¼ tsp ground black pepper
1. Preheat the oven to 450 degrees Fahrenheit. Combine the Country Crock Plant Butter, zucchini, red peppers, and red onion in a shallow roasting pan. Roast the vegetables until they are tender, which usually takes around 45 minutes. After roasting, mix in the garlic with the hot vegetables.
2. Meanwhile, combine the tomatoes, basil, lemon juice, lemon peel and black pepper in a large bowl. Mix in the roasted vegetables. Serve warm, at room temperature or chilled.
