As for Daemon, the only symbols associated with him are the star patterns on his red hoodie. According to @Marcelpi3, the star symbol connected to the Chiba clan would be that of Genbu, known as the Guardian of the North Star and worshipped by the Chiba clan as the deity Myoken, which is also featured on Chiba's present-day flag.
