MAPPA has not provided any information on why the episode will be delayed. Based on the context of the previous episode, it seems likely that the animators need additional time to finish the upcoming episode. This suggests that Studio MAPPA has decided to postpone the release to give the animators more time.
Additionally, it is worth noting that typically 8-10 preview images are released before an episode premiere. However, for the previous episode, only six preview images were made available, marking a departure from the usual pattern.

Adding to the issue, the anime has only unveiled four teaser images for the upcoming episode on their official website. This suggests that the animation team for Jujutsu Kaisen is still facing delays and requires additional time to animate other sequences.
Therefore, the delay may not have been planned to allow the animation team some extra time. It is more likely that the animation team is significantly behind schedule, leading the production committee to postpone the release of the upcoming episode.
Editor's P/S
As a Gen Z fan, I am quite disappointed about the postponement of Jujutsu Kaisen season 2 episode 18. I have been eagerly waiting for this episode since the last one ended on a cliffhanger. I understand that unforeseen circumstances can happen, but I wish MAPPA had given us more of an explanation for the delay.
The lack of transparency from MAPPA is frustrating, and it makes me worry about the future of the anime. I hope that the studio can get back on track and release the episode as soon as possible. In the meantime, I will be patiently waiting and hoping for the best.
